From north to south, along its entire length, Apulia holds great surprises in terms of culture, landscape and history. But this fantastic region does not miss out on one of the most precious treasures of our lives: food!

Each city can offer different food and wine traditions, linked to its ancient origins and traditions that never cease to be part of the present. As in a dance between land and sea, each day will be a pleasant discovery of the flavours, aromas and traditions of Apulian cuisine.

You will visit the stony Murgia and the mysterious Valle d'Itria with its UNESCO heritage trulli, take a leap into the history of the Sassi of Matera and enjoy the cliffs of Polignano; you will get lost in the alleys of Ostuni, breathe in the air of the "Florence of the South", Lecce, and admire the timeless beauty of Otranto.

Fragrances and flavours will be the common thread that will lead you to discover a wonderful land that will amaze you at every glance and every... bite!

  • The means of transport we recommend is a car, to be hired on arrival in Apulia. (We can help you!)
  • Overnight stays in the city are not planned. (We avoid proposing large hotel chains to give the destination uniqueness and authenticity).

On arrival at Bari airport, you will reach the Hotel Realais "Antica Masseria" or similar in Valle D'Itria. Here you will be greeted with a welcome drink, made special by the presence of typical local products.

Putignano and Fasano - The masserie of the Bassa Murgia

After breakfast, we set off for the Bassa Murgia, home of mozzarella and primitive wine.

In the beautiful, unspoilt countryside of Putignano you will visit a farm that produces high-quality, healthy and natural cured meats and cheeses. The farm has been involved for years both in the production and sale of local organic products and in raising awareness of a healthy diet with full respect for the environment.

This will be followed by a visit to the charming Masseria Salamina, which dates back to the 17th century and is now a multifunctional farm (organic farm, agritourism, educational farm). Here you will take part in the "Mani in pasta" cooking class and learn to know and use different types of wheat and cereals, grinding and kneading: .

Each participant will experience first-hand how flour is obtained and how it is used. Afterwards, they will prepare their own focaccia, to be seasoned with ingredients gathered together from the garden, and make typical shapes of semolina wheat pasta: orecchiette, cavatelli or laganari.

At the end of the experience, a tasting of the prepared dishes will follow.

Matera - The Murgia of Matera

After a hearty breakfast you will set off for Matera, where an unmissable culinary experience awaits you: at the "Forno di Gennaro" you will discover the history of the company and the secrets that make Matera bread unique. At the end of the visit you will be able to unleash your bread-making creativity, creating your own bread shape, and satisfy your culinary curiosity with a tasting of bread and other home-baked products.

You will certainly not miss a guided tour inside the Sassi, accompanied by an expert guide, qualified and recognised by the Basilicata Region. Following his steps, you will learn about the history of this UNESCO site, more unique than rare, which has become an exceptional film set several times.

Monopoli and Polignano a Mare - Two sides of the same coin

In the morning, after breakfast at the hotel, you will drive to the "Masseria Fortificata Spina", built between the 11th and 18th centuries. The farm covers seven hectares within the Piana Park of ancient olive trees and tells a very ancient story through the route inside the fortress. Through the guided tour, you will discover the places, colours, flavours, traditions and customs of the local rural civilisation. Finally, you can taste the goodness of the local olive oil.

In the afternoon you will head to the Adriatic coast to visit Polignano a Mare with an accredited tourist guide recognised by the Region of Puglia. Polignano a Mare is the birthplace of the first modern singer-songwriter, Domenico Modugno, who is known worldwide for his song 'Nel Blu Dipinto Di Blu (Volare)'. The historic centre of the town overlooks cliffs overlooking the sea, where balconies and flowery alleyways offer a truly poetic and exciting setting.

After the visit, there will be a stop for a tasting of Polignano's renowned special coffee (made with coffee, sugar, lemon zest, cream and amaretto) or the famous local ice cream.

Alberobello and Ostuni - Between trulli and olives

Before setting off on a new day of adventure you will need to pack your bags, as this day will see your last breakfast at the Hotel Relais "Antica Masseria" and transfer to your second host property on this trip in the evening.

During the morning you will visit Alberobello, the world capital of trulli and a UNESCO site. Trulli are dry-stone houses with an easily recognisable conical dome that dot the Murgia, the heart of the region. Once in town, you'll have plenty of time to wander among the trulli, craft and locally made gift and weaving shops, bars and restaurants.

And when you're hungry, a trullo will welcome you to discover the local delicacies in this unique restaurant, housed in a typical local farmhouse.

In the afternoon you will visit Ostuni, the "White City", with an accredited guide recognised by the Region of Puglia. The beauty of this town is unparalleled and every house is a vantage point from which to enjoy views of the countryside and the sea.

You will then visit an olive oil farm near Ostuni. You will walk among the impressive monumental olive trees and discover the oldest specimens with their fascinating sculptural forms. Here you will hear the story of olive cultivation, the hypogeum oil mill, one of the oldest in Apulia, and the historic rooms of the masseria, where you can breathe in the memory of olive processing and life on the masseria.

There will also be a tasting of organic extra virgin olive oil.

At the end of the day, you will reach the "Masseria Bosco" or similar for an overnight stay. You will be greeted with a welcome drink and a tasting of typical local products.

Cutrofiano and Lecce - The Salento between history and food and wine

After breakfast you will visit the masseria "L'Astore", the ideal place to immerse yourself fully in the culture and typicality of the land of Salento. Surrounded by about 100 hectares of vineyards and olive groves, you will be guided to discover the history of oil and wine: you will have the opportunity to walk inside one of the largest underground oil mills in Salento and in the underground barrel cellar, the cathedral of wine. At the end of the visit you will enjoy a tasting of wines, typical products and extra virgin olive oil produced in the farm.

In the afternoon you will visit Lecce accompanied by an accredited tourist guide recognised by the Region of Puglia. The city, known as the "Florence of the South", knows how to amaze and fascinate tourists and visitors alike. Its ancient Messapian origins and the archaeological remains of Roman rule are mixed with the richness and exuberance of the Baroque, typically 17th-century, churches and palaces in the centre.

To end the day on a high note, you will taste the famous pasticciotto (a soft pastry with a heart of custard), accompanied by typical Salento coffee, mixed with almond syrup.

Salice Salentino and Otranto - Discovering Alto Salento

After breakfast at the hotel you will reach Castello Monaci. Here you will take a real journey into the world of Salento viticulture.

3,000 olive trees and 200 hectares of vineyards surround the castle, in an enchanting sunlit setting, while a tufa cellar holds an infinite number of barriques in its arms, and further on a museum recalls the evolution of the vines in this area.

To take advantage of this oenological opportunity, Castello Monaci is organising a Wine Experience with expert winemakers and sommeliers who will take you to learn the secrets of the vineyards, the special equipment in the cellar and the story told in the Merum Museum. The tour will end with a tasting of the wines and other gastronomic specialities of the area.

You will then head towards Otranto. Together with an accredited guide recognised by the Apulia Region, you will walk through the streets of an authentic historical jewel: Italy's most eastern city is one of the most beautiful in the whole of the peninsula and is rich in tradition. Its village has been recognised by UNESCO as a Messenger of Peace site.
